This is a super easy fudge brownie recipe where you can tweak to create your own flavour. Have fun! :)

Recipe: (makes two 13cm x 16cm x 3cm brownies)
100g unsalted butter
200g DARK chocolate (around 70%) (recommended due to the high amount of sugar in the recipe)
2 eggs
170g sugar
100g plain flour
Biscoff spread
Biscoff cookies
Oreo cookies
Cookies and cream chocolate
Steps:
Melt chocolate and butter. In another bowl, whisk eggs and sugar until very frothy and pale in colour. Around 2-3 min. Add in cooled butter and chocolate mixture and whisk till combined. Sift in flour and whisk till just combined. DO NOT overmix. For EACH brownie slab, there will be a total of 320g of brownie mix. 160g for the first layer, add in desired toppings, then cover with another 160g of brownie mix. Bake at 175°C / 350°F for 24-26 min or until tooth pick inserted comes out with a few crumbs attached. Let chill in fridge overnight to get the maximum fudgy-ness or chill for at least 4 hours. Decorate.
